A Mexican-inspired, budget-friendly soup that’s hearty, full of hidden veggies, and spiced to perfection with A Spice Affair seasonings. It’s nutritious, filling, and easy to stretch for meal prep or family dinners.
🌾 Ingredients
Rice (set aside for later):
3 cups rice
3 cups water
1 tbsp Paprika by A Spice Affair
Soup Base:
1 can (28 oz / 796 mL) kidney beans, pureed
1 bag (760 g) frozen mirepoix vegetables (carrots, celery, onions)
1 red onion, diced
1 block (150 g) frozen chopped spinach
8 cups water
4 tbsp Guacamole Seasoning by A Spice Affair
4 tbsp Garlic Mashed Potato Seasoning by A Spice Affair
Prepared paprika rice (add in the last 10 minutes of simmering)
👩🍳 Directions
Cook rice with water and paprika. Set aside.
In a large soup pot, combine pureed kidney beans, frozen vegetables, onion, spinach, water, and both seasonings.
Bring to a boil, then reduce heat and simmer for 25–30 minutes.
Stir in the prepared rice during the final 10 minutes.
Adjust seasonings as needed and serve warm.
