Ingredients (makes 10–12 muffins):
6–8 eggs
½ cup milk or plant milk
1 cup chopped vegetables (spinach, peppers, mushrooms, onion)
½ cup shredded cheese (optional)
1–2 tsp seasoning blend of choice
Salt & pepper, to taste
Instructions:
Preheat oven to 350°F (175°C).
Whisk eggs and milk in a bowl.
Stir in vegetables, cheese, and seasoning blend.
Pour into greased muffin tin.
Bake 20–25 minutes until set.
Cool and store in the fridge (up to 5 days) or freeze.
