If mornings are rushed, egg muffins are one of the simplest ways to stay nourished without cooking every day. A short prep session gives you several grab-and-go breakfasts that support energy, focus, and fullness.

🍳 Recipe: Savoury Veggie Egg Muffins with Seasoning Boost

Ingredients (makes 10–12 muffins):

  • 6–8 eggs

  • ½ cup milk or plant milk

  • 1 cup chopped vegetables (spinach, peppers, mushrooms, onion)

  • ½ cup shredded cheese (optional)

  • 1–2 tsp seasoning blend of choice

  • Salt & pepper, to taste

Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Whisk eggs and milk in a bowl.

  3. Stir in vegetables, cheese, and seasoning blend.

  4. Pour into greased muffin tin.

  5. Bake 20–25 minutes until set.

  6. Cool and store in the fridge (up to 5 days) or freeze.

  • Reheat 1–2 muffins in the microwave

  • Pair with fruit or toast for a balanced breakfast
