🍎 Baked Oatmeal Slices: Breakfast You Can Cut & Go

Make once, slice all week. Baked oatmeal is one of the most cost-effective breakfasts you can prep. Spices are key - they add warmth, sweetness perception, and variety without sugar.

🌿 Why Spices Are a Smart Addition

  • Cinnamon and warming spices help regulate blood sugar response

  • Flavour complexity increases satisfaction with less sweetener

  • Pantry spices extend shelf life of flavour variety

🧠 Science reference: Research published in Nutrients highlights *cinnamon’s role in supporting glucose metabolism when included regularly in meals.

🍏 Recipe: Apple Cinnamon Baked Oatmeal

Serves: 6 Prep time: 10 minutes Bake time: 30–35 minutes

Ingredients

  • 2 cups rolled oats

    • (optional substitute 1/4 cup of protein powder for a 1/4 cup of rolled oats: recipe in a previous blog)

  • 1½ cups milk or plant-based milk

  • 1 large egg

  • 1 cup apple, peeled and diced

  • 2 tbsp maple syrup or honey (optional)

  • 1 tsp warm spice blend or *cinnamon

  • ½ tsp baking powder

  • ¼ tsp salt

  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8 baking dish.

  2. In a large bowl, mix rolled oats, chopped apples, and seasoning blend until evenly combined.

  3. In a separate bowl, whisk together milk, egg, and any sweetener you’re using.

  4. Pour the wet mixture over the oats and stir well.

  5. Transfer to the baking dish and spread evenly.

  6. Bake for 30–35 minutes, until the center is set and the top is lightly golden.

  7. Let cool slightly, then slice into squares.

How to Store & Use

  • Store in an airtight container in the fridge for up to 5 days

  • Reheat slices in the microwave for 30–60 seconds

  • Serve with yogurt, milk, or nut butter for extra protein or bake with my homeade protein powder that is heat-tolerant and elevates any baked goods with protein.

How to use: Bake once, slice, refrigerate, reheat as needed.

🤝 Seasoning support: If you want help choosing spice blends that work for sweet breakfasts without overpowering, A Spice Affair has at least 4 that I would use that I love and I’m available to help.
